EASY CELERIAC SOUP


Celeriac is one of my favourite vegetables and I actively look forward to autumn so I can start gobbling it up at every opportunity. Not necessarily considered a thing of beauty, but certainly considered a thing of delectable deliciousness (by me at least!), it makes the most comforting and nourishing bowl of autumnal soup.

Ingredients:

50g butter

1 celeriac, peeled and cubed

1 potato, peeled and cubed

1 leek, washed and roughly chopped

1 onion, peeled and roughly chopped

1 garlic clove, sliced

800ml stock (vegetable or chicken works best)

200ml whole milk (if you don’t drink diary, do 1 litre of stock instead)

Pesto to serve

Method:

  1. Melt the butter in a big pot over a medium heat.

  2. Add the celeriac, leek, potato, garlic and onion. Season with salt and pepper and allow all the veggies to sweat for about 10 minutes until they start to soften.

  3. Add the stock and milk (if using), let it come up to a boil, then turn the heat down to low and allow it to simmer for 20-30 minutes until the celeriac is completely tender.

  4. Allow the soup to cool a bit then liquidise until its really smooth and silky.

  5. Return the soup to the pan, and warm it up again just before serving. Always check for seasoning too :)

  6. I use a home-made almond pesto on top but you can use any shop bought or home-made pesto.

Serve with chunky sourdough for dipping and maybe a crisp glass of white wine.
